Beef Patties in Onion Gravy

This recipe is soooo good. Not too mention how easy and cheap it is to make. So when you have a large family and are on a budget this meal is a great idea.
Patties
1 lb ground beef
1 egg
1/2 cup dry breadcrumbs
1/2 envelope dry onion soup mix (I use the beefy onion soup mix)
1 teaspoon Worcestershire sauce
1/8 teaspoon pepper
Gravy
1/2 envelope dry onion soup mix
2 cups water
2 tablespoons flour
Directions:Prep Time: 10 mins
Total Time: 35 mins
1 Combine all patty ingredients;mix thouroughly with your hands and shape into 4 patties.
2 Spray a non-stick skillet, and brown patties on both sides.
3 Add dry onion soup mix and 1 1/2 cup water.
4 Cover pan tightly and simmer for 20 minutes.
5 Remove patties to a plate.
6 In a gravy shaker or jar, combine 1/2 cup water with 2 tbs. flour.
7 Stir flour and water into onion gravy.
8 Stir constantly with a whisk until it comes to a boil.
9 Boil 1 minute.
10 Return patties to pan.
11 Serve with mashed potatoes or hot cooked noodles.

The Weekend Review

Well, I did it. I survived going to my grandmothers for Christmas. I had a very nice time. The kids enjoyed themselves as well. I only had a minor moment that I wanted to scream but we were already leaving so I guess that is a good thing.
I don't speak to my Dad anymore because he chose to side with my ex husband instead of his own daughter. What a stab in the back that was. I haven't spoken or seen him in about two years so this was the first time seeing him since then.
I tried to get a picture of all of the grandchildren for my mom. I packed up my camera so I had to use my phone. As you can tell a few of them did not want to get there photo taken. But at the same time this photo totally describes everyones personality! So therefore it is perfect.

How do you measure success? I found this article on 7 stupid ways to define success.
Here are 7 ways to define success that are guaranteed to make you feel like crap:
1 Your bank balance.
2 How fancy your car is.
3 How fancy your house is.
4 How fancy your clothes are.
5 The shape of your body.
6 How other people see you.
7 How popular you are.
I find it extremely silly on how people find success just this way. My sister and my father think that I am a nothing and that I have not made it in life. But I have a beautiful family, a roof over my head and my husband has a job where I stay home to care for the kids and take them to all of their activities. We aren't rich by any means but we make do.
Yes, they might have nice cars and good jobs and where nice expensive clothes. But are they really happy? I don't have to come home and have a drink every day either. But that is another subject. But sometimes it is hard to not feel down when your own family isn't proud or happy of your successes.

Pour Your Heart Out...Truth

Here I am with my kids cutting down our tree.
How do you know when to trust someone? Especially when it could affect your children. When you hear about how someone wants to change and yet something happens and you just aren't sure you are supposed to start trusting again.
I am trying to believe that people can change. I mean hell I want to make changes in my own life. But someone has made your life pure hell and put you thru so much heartache how do you know if they are someone to believe in again? I do not want to put myself thru anything that I don't have to go thru. I can't put my family thru the turmoil again.
You know the heart and the gut don't always match up. I know that time makes all of the difference but sometimes time isn't fast enough.
God wants us to forgive one another as He did us. But forgetting is always so hard to do. Learning how to trust again isn't easy.

I couldn't love these guys anymore. I just don't think it is possible. Those smiles are priceless. They may drive me complete nuts but there is no way possible I could live without them. And I am so glad that I photograph so many of their memories.
